Following on from the success of their bespoke in-house training academy, Entier has now launched the only Marine Coastguard Agency (MCA) Approved Centre in the North of Scotland for Ship’s Cook Competency.
A course designed for all chefs and cooks on board commercial sea bound vessels, the certificate is legally required as per the Maritime Labour Convention (MLC 2006) and provides objective assessment of chef’s skills in a controlled environment to verify they can cook correctly and safely across a range of techniques, using a variety of foods.
Entier’s Training Academy at their facility in Westhill has recently gained the prestigious accreditation making them the only provider North of Scotland. The £1m facility in the outskirts of Aberdeen was purpose built to house an impressive production facility and a state of the art training academy kitchen for the recruitment, development and training of culinary staff.
The course which includes a practical assessment and theory exam will be assessed by Entier’s Executive Chef, Ali MacSween, an award winning chef in his own right and will offer candidates an approved certificate and qualification to work on sea bound vessels internationally. The assessment is thorough and covers food and knife health & safety, healthier diets, allergens & food intolerance and requires the candidate to produce a 3 course meal in 3 hours followed by a nautical cook’s theory assessment.
