The owners and staff of Aberdeen’s newest luxury hotel, The Chester Hotel, are celebrating having achieved two AA Rosettes for their fine dining restaurant, IX Restaurant.
The long-established AA Rosette scheme recognises successful cooking at different levels across the UK. The aim of the Rosette scheme is to provide AA Members, its guidebook readers and the general public reliable information about where to eat. Two rosettes are awarded at the time of inspection to ‘excellent restaurants that aim for and achieve higher standards and better consistency’ and a ‘greater precision is apparent in the cooking, and obvious attention to the selection of quality ingredients.’
The Chester Hotel’s culinary team is led by award-winning executive chef Kevin Dalgleish who joined The Chester Hotel team in 2012, coming from Ackergill Tower, where he led the restaurant team for 10 years. Kevin heads up the kitchen for fine dining IX Restaurant and the relaxed IX Bar with the help of his 16 strong brigade. Classically trained at London’s The Savoy, Kevin only works with quality suppliers which provide proof of traceability, including: Wellocks, Campbells Prime Meat and George Campbell & Sons, Gartmorn Farm. Kevin’s signature dish is Duck Tartare.
